Living wine changing over time
"The main actor of a historical land,
took sips like broad smiles,
sparkling and fresh greetings
from a garden of a thousand flowers."

Moscato Bianco di Canelli.

Vineyards are located on the hill of Moncucco in the Municipality of Santo Stefano Belbo. They are South-West-oriented and highly sloping at a height between 250 and 350 metres. They are the Sorì del Moscato.

Marls with fine sands.

This bottle contains the tradition of our territory. Over forty years-old ineyards planted on free and steep lands. Grapes are harvested by hand in boxes at the beginning of September. Then fresh grapes are pressed entire. The must is fined, not preserved in the fridge, but low-temperature fermentation starts immediately and lasts 8 days. When the must reaches 5.5% or 6% of acquired alcohol, fermentation stops with the cold and the must is left on its deposits for some months. Afterwards, the wine is fined and bottled.

Steel tanks in the winery and at least 6 months after bottling. It is interesting to evaluate its evolution after 24 months.

More or less intense straw-yellow depending on ageing. When you smell it, you will feel a great freshness and fragrance with notes of sage, green apple and candied fruits. When you taste it, you will notice a pleasant balance between the sweet component and the acid one, which give persistence and finesse.

With a moderate alcohol content of about 6%, it must be consumed fresh and must be paired with dry and fresh pastries. It is interesting to evaluate the bottle-aged versions as appetizer or with salted courses.
